BBQ Sheet Pan Tofu Nachos
60 mins prepServes 4
A flavorful and easy recipe for BBQ sheet pan tofu nachos, featuring shredded tofu tossed in sugar-free BBQ sauce, layered over tortilla chips with black beans and cheddar, then baked and topped with fresh ingredients.
How to:
1. Drain your two blocks tofu and press for 30-40 minutes to remove as much moisture as possible.
2. Shred tofu with a box grater on the largest setting. Lightly tap shredded tofu with paper towel to remove any excess moisture.
3. Heat a frying pan over medium to high heat. Add shredded tofu and stir until heated through (you may have to do this in batches depending on the size of your pan).
4. Add bbq sauce, salt, pepper, garlic powder, and onion powder. Mix thoroughly until tofu is coated.
5. Preheat oven to 350.
6. Add parchment paper to a sheet pan and add a layer of tortilla chips (I do 10-15 per serving).
7. Spread one fourth of the tofu mixture over the chips (this is for one serving but if you are making more than one you can adjust).
8. Sprinkle 1/3 cup black beans and 1/3 cup shredded cheddar over chips. Bake at 350 for 10 minutes or until cheese is melted.
9. Top with pico de gallo, guacamole, jalapeños, and chopped cilantro.
